Description	This repository contains a dataset of 20,000 chicken carcass images collected during Marcelo dos Santos' doctoral research. The images were acquired under industrial conditions in poultry processing plants and subsequently underwent a data augmentation process. The dataset is organized into 9 folders: one containing healthy carcasses and eight representing different types of lesions. The dataset was developed to train and evaluate artificial intelligence models for automated food inspection and quality control in poultry processing. Each image captures up to three carcasses photographed on the factory production line under normal working conditions. The images are stored in JPEG format with a resolution of approximately 1.3 megapixels (1280 × 1024 pixels) and an average file size of 500 KB. Dataset structure: • 1 PDF file: dataset description and metadata • 3 JPEG files: representative image samples • Compressed folders organized by classification: - Healthy carcasses - Scratch - Arthritis - Footpad dermatitis - Dermatitis - Dermatosis - Fracture - Hematoma - Skin tear (2025-11-10)

Authors Contributions: Marcelo Carlos Benitez dos Santos -- Contributions: Prepared and configured the photographic equipment and setup; collected, curated, and classified the images according to their categories (healthy carcasses or specific lesion types); performed data augmentation processing; organized the dataset into type-specific folders; compressed the dataset; and uploaded it to a cloud storage area. André Franceschi de Angelis -- Contributions: serving as the doctoral advisor, was responsible for the technical preparation and repository submission of the chicken carcass image dataset. His contributions included downloading the complete dataset from cloud storage, decompressing the original folders, reorganizing the folder structure to comply with repository standards and size limitations, recompressing individual folders as needed, drafting and finalizing the metadata documentation describing the dataset's characteristics and organization, and executing the final upload to the repository platform. It should be noted that Professor Angelis did not participate in the original image collection process conducted under industrial conditions, nor in the subsequent data augmentation processing that expanded the dataset to 20,000 images across 9 categorized folders.
